feta stuffed pesto & rosemary bacon-wrapped chicken

These are the worst photos due to my phone, but thought I would share this impromptu chicken recipe I did anyway. I obviously had ingredients to use up and well, they all tasted great together.

Feta Stuffed Pesto & Rosemary Bacon-Wrapped Chicken

Ingredients:

2 chicken breasts, thawed

1 cup Feta cheese

2 strips of bacon

1 pesto packet

Rosemary

Olive Oil

Salt & Pepper

Directions:

Pre-heat oven to 350 degrees

Slice open both chicken breasts, creating a pocket to stuff (do not cut completely in half)

Place Feta inside the pockets

Use pesto packet as rub (follow directions on packet if so) or just pour evenly, seasoning chicken

Wrap each chicken breast with one strip of bacon

Pierce the ends of the bacon together with a rosemary sprig, holding it in place around the chicken

Place chicken in a well oiled baking dish

Sprinkle with salt and pepper

Cook until chicken is done, approximately 45 minutes

Optional: Quick broil at the end to crisp the bacon if you like
