easy cheesy-cakes

Mini cheesecakes are delicious and darling. These ones are very simple, and something great to freeze and bake quickly when you have an event or just want something yummy!


{ This amount of cheesecake makes a lot, approximately 80 mini’s. Just about 2 – 2.5 cups goes into 24 mini cups; therefore, I made this batch and froze some for later. It is quick to defrost and just as tasty. }

2 pkg. of (8oz.) cream cheese, softened to room temperature

3/4 cup sugar

3 eggs

1 Tbsp vanilla

1 Tbsp lemon juice

Mini-Nilla Wafers

Mini baking cups (at the Dollar Tree right now)

1. Pre-heat oven to 350.


2. Line mini muffin pans or baking sheet with mini muffin cups and Nilla Wafers.

IMG_20833. Mix above ingredients.


4. Spoon cheesecake mix atop wafers, leaving just a little bit of space at the top.


5. Bake at 350 for 15-20 minutes. Let completely cool.


6. Top with cheery pie filling or raspberry/blueberries, etc…

7. Refrigerate for a bit and enjoy!
